1. Preheat
oven to 350. Grease two 9 inch cake rounds and line the bottoms with parchment
paper.
2. Place,
flour, coco, baking powder, baking soda, salt and sugar into the bowl of a
standing mixer. Stir to combine.
3. Add
the eggs, milk, oil, and vanilla. Stir to combine.
4. Scrape down the bottom and sides of the bowl
and add in the hot coffee. Stir until fully combined.
5. Pour batter into prepared cake pans and bake
for 25 to 30 minutes.
6. Let cool for about 10-15 minutes in the pans
and then invert them onto a cooling rack, and allow to cool completely to room temperature.
7. Cool
completely before filling and frosting.
8. To assemble: take half of your mousse and spread it over first cake layer. Place 2nd cake layer over mousse layer. Frost the top of cake with remaining mousse. Sprinkle top of cake with chocolate shavings, chocolate chips, or crushed chocolate wafers or Oreos. Serve immediately or refrigerate.
